Taco nights are a common theme in our house. Chicken or beef, the girls love building their own taco or taco salads. I usually like setting up a "Taco Bar" with all the additions - tomatoes, lettuce, black beans or re-fried beans and salsa.I try to make my own taco seasoning mix but when I don't have all the spices or need a quick fix, we like the Old El Paso seasoning. Trying to change it up a bit, we made these Double-Layer Tacos. My family loved them and they are now a new addition to how we make tacos. We also downloaded and played a game that I never knew about and is a fun way to add some fun to the dinner table. I don't know if I can really choose a favorite dinner. Sometimes I like stirfry, sometimes I like fruit, sometimes I want potatoes and nothing else will do! Other times, I crave tacos. REALLY CRAVE anything spicy. I guess I like variety a whole lot! Cooking from scratch makes that fun. :)
